Coconut Crusted Chicken with Spicy Apricot Dipping Sauce



Chicken is a staple in most homes and that is why it’s always fun to try something new and switch it up! This Coconut Crusted Chicken with Spicy Apricot Dipping Sauce is delicious! The sweetness from the coconut, the crispy texture, and perfectly cooked chicken dipped in the spicy apricot sauce pleased the whole family! I served the chicken over rice which complimented the sauce great but this can also be made as an appitzer.


This Coconut Crusted Chicken with Spicy Apricot Dipping Sauce is one of the dishes that look hard but is very easy and a quick meal that you will want to keep making for your family and friends! The Spicy Apricot Sauce is also easy! It has only three ingredients. Apricot preserve, red wine vinegar, and red chili flakes. The dipping sauce ties this whole dish together and elevates it!

Coconut Crusted Chicken with Spicy Apricot Dipping Sauce

Serves 4

  • 1 1/2lb chicken tenders
  • 1/2 cup cornstarch
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 Large egg whites
  • 2 cups sweetened shredded coconut
  • vegetable or corn oil (enough for deep frying)
  • Spicy Apricot Dipping Sauce
  • 1 cup apricot preserve
  • 1 tablespoon red wine vinegar
  • 1/2-1 teaspoon crushed red pepper flakes


Step 1
Mix cornstarch, papricka, salt, and pepper in a shallow bowl and set aside.
Step 2
Beat egg whites in a medium bowl until frothy.
Step 3
Place coconut in a shallow bowl.
Step 4
Heat oil over medium heat until hot in a heavy skillet, oil should be about 2 inches deep. Dredge chicken tenders in cornstarch mixture, shake off excess. Dip chicken in the egg whites, then press into coconut, turning to coat both sides. Add chicken to hot oil in batches. Fry until golden brown and cooked through 3-5 minutes turning. Transfer to paper towel lined plate.
Step 5
Spicy Apricot Dipping Sauce:
Place all ingredients in a small bowl and mix well.
Step 6
Serve chicken hot with spicy apricot dipping sauce.
