I love eating seasonal and incorporating those seasonal fruits and vegetables into each dish I make. I have been buying fresh cherries for weeks now and although I love eating them plain and straight from the fridge, why not add them to banana bread?! This Banana Cherry Bread pleases the whole family and with little chunks of cherries add a wonderful texture and flavor! My boys wanted to eat the Banana Cherry Bread for dinner. Thankfully they settled for having a piece for dessert. This bread is flavorful, moist, and delicious with or without butter. It really doesn’t need anything else but I am a bread and butter gal!
I love the golden brown crust that pulls this Banana Cherry Bread together and adds just the right texture. One of the best things about baking is smelling it in the oven! Being 9 months pregnant I am in full nesting mode so I vengered to clean the kitchen from top to bottom. I had this baking in the oven while I was baking and what a wonderful treat to indulge in after cleaning. Warm bread and butter. There aren’t too many things better than that! A clean kitchen and homemade Banana Cherry Bread was a great trade off!

Banana Cherry Bread

- 1 cup shortening
- 1 cup sugar
- 2 Large eggs (beaten)
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 cups flour
- 2 Large ripe bananas (mashed)
- 1/3 - 1/2 cup fresh cherries (choppped and pressed between paper towel to soak up juice)
|Preheat oven to 350 degrees. In a large bowl cream shortening and sugar together until smooth. Add beaten eggs, flour, baking soda, salt, mashed bananas, and chopped cherries. Mix well.|
|Put into greased large loaf pan or two small ones. Bake for 35-40 minutes until center is done. Let cool on cooling racks and serve warm with or without butter.|
